Bare Knuckle Wheat Whiskey is sweet with a peppery edge. The nose is soft with hints of honey, vanilla, and baking spices. The palate begins mellow but gives way to tart and spicy notes of black pepper, dried fruit, and whole wheat bread. This elegant balance of spice and sweetness lasts through the long and complex finish. Like all Bare Knuckle whiskeys, wheat whiskey is made with 100% Virginia-grown grains, including 60% wheat, 30% rye, and 10% malted barley. Before we bottle our craft whiskeys, we typically proof them down to 90 proof, or 45% ABV. However, we leave this single barrel whiskey at the proof it came out of the barrel at; this typically is in the 120-125 range, or about 60% ABV. You can sip it neat, use it in cocktails, or add an ice cube depending on your preferences.
